How do we remove the alcohol?
Many people feel the best way to get a real beer flavor in an NA product is to fully ferment a beer so all the yeast flavors are formed, and then remove the alcohol.
At New Realm, we are using Vacuum Distillation process to remove alcohol from a base beer that was formulated to have substantial flavor and body after the alcohol is removed. For the Vacuum Distillation process, we use the fact that alcohol’s boiling point can be lowered drastically if the beer is held in a chamber in a vacuum. Minimal heating is then required to get the alcohol to evaporate and be removed, leaving behind beer with less than 0.5% alcohol but still containing the delicious yeasty esters and flavor characteristics from a traditional IPA.
